Noodle is Vietnamese secondary
staple food.
There are many varieties of noodles. Some are made of rice flour while others are made of egg and
all-purpose flour. The noodles come in different sizes, shapes, and textures.
Rice noodles are wheat and gluten
free. They are great for individuals who are allergic to wheat or gluten.
Some of the rice noodles are bún,
phở, and miến. Bún
noodles are thin and round strands like threads also known as rice sticks or vermicelli. Phở noodles are flat and wide.
Miến
noodles are thin and round similar to bún but are clear or
transparent instead of milky in color. Miến noodles are known
as glass noodles.
Egg noodles are yellow and known as mì.
Each noodle has its own flavor and texture. Noodles are a great substitute for rice when one needs a change of pace.
