Vietnamese sauces and condiments play an important role because they enhance the flavor of the food. Great tasting sauces are the essentials or the food will taste blend.

The sauce recipes in my cookbook, A Vietnamese Kitchen, are the fundamental building blocks for all great sauces.


Have you heard of fish sauce? It is a condiment special to Vietnamese cooking and seasoning.
 

Spicy food varies with different regions of Vietnam. Most people are mistaken Vietnamese food for Thai food. In general, Vietnamese food is less spicy than Thai food.

The southern part of Vietnam serves very spicy food whereas the northern part of Vietnam serves mild food. Someone told me “the hotter the climate thus the spicier the food.”

The spicy food generates sweat to cool body temperature. This theory makes a lot of sense. I am personally not a flame eater but my aunts and my mom are.

Be adventurous; add your favorite peppers to the sauces and condiments to put a pleasurable zing on your taste buds.
